Making reduced-fat chocolate chips?

I'm trying to reduce my cholesterol, and saturated fat seems to be an issue for me since I love homemade chocolate chip cookies (to a fault!). (Sure, I could make brownies, but it's not the same!!) Since reduced-fat, low-fat, or fat-free chocolate chips no longer seem to exist, I thought I'd make my own from cocoa powder. It may be hard to do, and the chocolate chips may be imperfect, but that's okay. I'd like to give it a try. Anyone know how I might try this? Thanks in advance for your help!
